White Chocolate fudge

Dark
Chocolate : 40gm (Chopped in small pieces)
Cocoa Powder 20 ml
Corn Starch 5 gm
Caster Sugar 50gm
Unsalted Butter 40gm
Liquid Glucose 20 gm

1)
Corn starch and cocoa powder sieve together and set aside in a mixing
bowl. |

2)
Boil water in heavy bottom sauce pan and dissolve the suger in a high
heat. |

3)
Transform half of the liquid into the cocoa mix and stir simultaneously
with a whisk to form slurry. |

4)
Now pour back the cocoa mix into sauce pan while stirring continuously in
low heat. |

5)
Remove from heat, add the chopped dark chocolate, butter and liquid
glucose.. |
|
6)
Cover with a lid and set aside for 5 min. allowing the chocolate to
dissolve. |

7)
Remove the lid stir well and strain through a fin wine strainer.
