Orange Ice Cream

Ingredients
:
500 gm Mango
300 ml Milk
250 ml Fresh Cream
450 ml of orange juice
a few orange segments and chocolate shavings
4 egg yolks

Method :

|
If
using fresh oranges cut and squeeze for juice.
|
|
Mix
egg yolks and suger over a double boiler and cook till sugar dissolves.
|
|
Add
milk to this mixture and cook on slow flame till the mixture acquires a
ribbon consistency.

|
Remove
from double boiler and cool. Add fresh cream and orange juice and blend
well with an electric beater or whisk.
|
|
Put
prepared mix into the desired ice cream mould ad freeze till half set.
|
|
Add milk to this mixture and continue to cook over double boiler till the
mixture reaches ribbon consistency.
|
|
Add blended mango to this and mix well. Fold in fresh cream
|
|
Whisk this mixture till it get smooth consistency. Transfer ice cream
mixture to old and freeze till half set. Blend again and freeze till it completely
set.
