SHEER KHURMA

CHANNAR POLAO

Sheer Kurma

INGREDIENT: Serve 7-8 
Preparation time : 2 Hours aprox

200g Chenna
200gm Rrice flour
2tbs Maida
400gm Sugar
A pinch saffron
Few cardamom, cloves, cinnamon
Oil or ghee
A pinch of Nutmeg
Few drops of keovra / Rose water
For Nikhuti (Small balls)
50gm Chenna
1tbs Maida

METHOD:
1) Make a syrup with sugar and 3 cups of water adding spices and keep aside.
For the Nikhuti :
a) Mix chenna and maida tightly and make small, small balls out of it.
b) Fry the golden brown in to Ghee and put them in syrup so that syrup enters the balls.
For the Chanar Polao :
1) Take the main portion of chenna with rice flour and maida finally.
2) Heat oil and ghee in the kadai / pan.
3) Take a portion on the above mixture and rub it through a perforated spoon in shape of rice into the hot oil.
4) Take out from oil immediately while still white in color and put in hot syrup.
Stir occasionally.
5) Repeat the same process separately with a small portion of mixture adding saffron color.
When cool, mix both carefully adding the balls and rose or keora water.
